The Lord of the Rings by JRR Tolkien
A Song of Ice and Fire by George RR Martin (the first 3 books anyway)
Blindsight by Peter Watts
The Last Castle by Jack Vance
Dune by Frank Herbert

Hmmmm.. best fantasy series for me has to be "The Wheel of Time" even though a few of the books in the series are stinkers.
For Sci-Fi, fun reads are the Miles Vorkosigan Series of books. For harder SF series I liked Asimov's "I Robot" series, the Ringworld series, and the original Dune series of books.
So many authors, so little time!

Larry Niven's Known Space! I might have to reread them now! And Asimov's Foundation Trilogy was a classic. Brian Aldiss's Helliconia Trilogy was also a classic...and throw in Steven Erikson's Malazan series...
